Finnish Meatballs in Cream Sauce

Small, tender meatballs browned in plenty of butter, then simmered in a pale cream sauce warmed with allspice. This is Thursday supper across Finland, served with boiled potatoes and lingonberries.
Ingredients
- 500 g ground beef and pork mix
- 1 small yellow onion, grated
- 60 g fine rye breadcrumbs
- 150 ml whole milk
- 1 egg
- 1 tsp ground allspice
- 1 tsp fine salt, plus white pepper
- 50 g butter, for frying
- 250 ml heavy cream
- 200 ml beef stock
Method
- Soak the breadcrumbs in the milk for 10 minutes until soft and swollen.
- Mix in the meat, grated onion, egg, allspice, salt and a good pinch of white pepper. Work the mixture briefly, just until it holds together.
- Roll into balls the size of a walnut with wet hands and rest them on a tray for 10 minutes.
- Melt the butter in a wide pan over medium heat and brown the meatballs in batches, turning gently until golden on all sides.
- Return every meatball to the pan, pour in the stock and cream, and simmer uncovered for 12 to 15 minutes until the sauce thickens.
- Taste, season, and serve with boiled potatoes and a spoonful of lingonberry jam.
